Because we used to be in yellow light a lot more – candles – we perceived the yellowish tint candles lent to paper as white. We knew the paper was white, so we saw white.

Now we have LEDs, which are way more blue in comparison. So we have something closer to "acutal" white.

Ask any photographer or designer about this. Or try to turn on the night mode on your phone or computer; it turns your screen more yellow/red. You'll notice it at first, but after a few minutes you acclimatize and without you noticing you see the colour temperature as being balanced. Turn it back off and it suddenly seems very blue (probably too blue) and harsh (probably too harsh).
